Baked the sweet potato, mashed and added to mash in with grains. Boiled 60 mins, followed hop schedule. Cooled and pitched yeast at about 74 degrees. Messed up and didn't plug in the fermentation fridge for about 12 hours. Then brought to 68, then to 66 for a day, then to 68. Will add oak spiral soaked in Real Spirits whiskey at end of fermentation until kegging, unless it needs more time. Will keg Monday before Thanksgiving and force carb for dinner.
