Switching to secondary after 2 days on coffee. The coffee is pretty overpowering, with some harsh back notes. This is gonna age on wood for a bit so hopefully will mellow out. Gravity is 1.021 at 32 F.
Hoping to bottle but still very astringent. Added a full White Oak spiral.
3.25 gal at bottling. A little rough but mostly just alcoholic. Bottled one gal normal as "Coffee Stout", one gal with 7 ML single vanilla extract, and one gal with vanilla and 3 ML of imitation maple extract (McCormicks). 56 g sugar (2 vol) at bottling, gentle stir.
