Notes


Strike water was 3 gallons distilled, 1 gallon tap. With a bit of Kmeta and 1 gram CaCL and 5 mL lactic acid. Ditto for the sparge water

Had 7.5 gallons of wort, at 1.028 gravity, so boiled hard to reduce down to my target of approx 4.5 gallons

Looks like I undershot a tad - low on gravity. I think I should crush even finer if possible

Cooled to 60, by time racked into keg in the garage it was 55. Pitched a stepped up starter, hooked up fermentation keg to serving keg to purge with gas, and a blowoff from serving keg to sanitizer.

Thurs Dec 17th (4 days post pitching) it was 1.020 and I moved upstairs and spunded. Saturday Dec 19th (6 days post pitching) it was 1.008 and I believed done. Comes out to 4.7% ABV

Cold crashed overnight, racked to keg with gelatin, and put in fridge on Sunday Dec 20th. Smelled and tasted very pilsner-y! Great hop balance. Could use maybe a touch more munich malt next time? Like 2% more.

Dec 31 update: Returned from a week away, and after cold conditioning for that time, it's crystal clear!! Still believe a bit more munich would be be good
