Mashed at 152
3 g gypsum and 2 g CaCL, and 2 mL lactic acid in both the sparge and mash water

Pre-boil gravity at 1.038, indicating good efficiency. Crush was very very fine.

Post boil had about 4.4 gallons @1.055 OG. Added the yeast starter and some distilled water to get to about 4.75 gallons.

Cooled to approx 55 degrees at pitch. Fermented at ambient 62 in basement for 5 days, then brought upstairs to ambient 64 for 3 days and ambient 68 for 2 days

Day 10 the gravity was at 1.004, which is over 90% attenuation and very high... about a 6% beer! Kegged. Gravity sample tasted nice, like a pilsner.
