I walked away from the burner at 20 minutes and accidentally raised this to 170. Got it back down in 5-10 minutes but we'll see if the FG is where I wanted and if this is tannic.
Diacetyl rest start date. Moving from 58-64 to 68-70 F. 1.014. Dark, fruity, a lot of diacetyl and maybe some DMS.

1.017 at 36 F so likely no change vs the 68 F reading.
Syrupy, dark fruit, low chocolate.
Undercarbed, possibly underattenuated. Syrupy, molasses, dark fruit.
Oaky, vanilla in addition to the previous notes. Undercarbonation is fundamental, just not below the style.
Such a solid Baltic, but it just never carbed up. I'm gonna have to either try some radical bottle carbonation methods, or use it for blending.
