I walked away from the burner at 20 minutes and accidentally raised this to 170. Got it back down in 5-10 minutes but we'll see if the FG is where I wanted and if this is tannic.

Diacetyl rest start date. Moving from 58-64 to 68-70 F. 1.014. Dark, fruity, a lot of diacetyl and maybe some DMS.

Such a solid Baltic, but it just never carbed up. I'm gonna have to either try some radical bottle carbonation methods, or use it for blending.
