Initial ph 5.6, lowered to 4.25 with several teaspoons of lactic acid. On inspection both the lacto and sacc were expired. Wort pre pitch tasted fine despite all of the place kettle temp readings, but I mashed for 90 to compensate
No off flavors, but weak banana, a bit bready in the aroma, dough. I had to move the fermenter out of my bedroom because of the smell. The yeast in this didn't start airlock fermentation until two days after brewing - I pitched when the beer was 85-90 which is great for lacto but not for sacc. Need to get the temp down more next time, or pitch the next day. Will continue checking and let this get down to 3.3/3.2

Bottling this. 23 g/gal. The variants:
Ahtanum hops 1 oz/1 gal. Low pine and citrus, banana, biscuit. A lot of sediment. 3.5/5
Lemondrop hops 1/2 oz/1 gal. Complex, a little hot, smooth, banana, clean, bubblegum on the finish. Good compaction on the sediment. Lots of potential. 4/5.
Evergreen/Saaz 2 oz/2 gal. Mint, banana, low menthol, apricot, banana, biscuit, sour. 4/5
Banana is too low. A bit hot.
Lemondrop test - Banana and sweet tart aroma. Flavor is sweet tart, banana, pith, tangerine.
