Stuck Mash. Transferred grain to a strainer over a separate pot and sparged about 2-1/2 quarts grain with a quart of water, then placed grain in Igloo mash tun. Repeated this with the remaining grain and then did a second sparge in Igloo mash tun with about 2 gallons of water. Boiled for about an hour prior to first hops addition to get to desired pre-boil volume.
Took specific gravity reading after 60 minutes but prior to final hops addition and estimated about 20 minutes boil time needed to reach desired original gravity. This was slightly off with original gravity = 1.082. Pretty close given all the trouble with the mash!
Using a keg as a settling chamber with a floating dip tube was a bad idea. Lost about 1/2 gallon wort in this process. Do not try this again. Either use a glass carboy as a settling chamber or just bypass this step and filter beer AFTER fermentation.
Mash pH: 5.72. This reading was prior to realizing it was stuck. Added about 8g lactic acid. Second pH reading was 5.52.

After 3 day Diacetyl rest, ABV: 7.86%.
Transferred from Keg to 4 x 1-gallon plastic jugs (90% full, 3.6 gal total) in preparation for freezing to make Eisbock.
Froze approx half of 4 x 1 gal jugs and drained unfrozen into 2 x 1 gal kegs to make Eisbock.
~ 1.8 gal Eisbock SG:1.025. Some water was removed, leaving the beer with more % alcohol by volume.
~ 1.8 gal Frozen ice/slush after melting, SG: 1.012. This contained a higher % water (SG: 1.00) that froze.

Hard to judge %ABV after freezing. Gravity went up instead of going down (as it would with fermentation) as some water was removed.
