Notes

Tips:
• Ascorbic acid in mash to reduce oxidization
• Lactic acid to drop pH before whirlpool
• Ascorbic acid at kegging to reduce oxidization

Dry hop schedule:
• 5oz–7oz total
• Day 1: Pitch at 65⁰F and let fermentation free rise to 72⁰F
• Day 4*: Dry hop ½ the hops when 2–3 pts away from FG
• Day 7: Hit FG and diacetyl rest @ 72⁰F for 24–48 hrs
• Day 8: Soft crash to 50–60⁰F for 24 hrs
• Day 9: Dry hop rest/all the hops for 3 days
• Day 12: Crash to 33⁰F for 24–48 hrs
• Day 14: Fill keg full of sanitizer, push out and purge fully with CO2, add ascorbic acid to keg, close transfer to keg then carbonate

* Optional dry hop – can introduce oxygen

Dip Hop:
• 2–4oz
• 1L water @ 170°F
• 30–60m

Whirlpool:
• 160–170⁰F for 30m

Incognito – 5g per 1oz:
• 10g (½ jar) = 2oz pellet
• 20g (1 jar) = 4oz pellet

Hop Hash – 0.75oz per 1oz:
• 1.5oz = 2oz pellet
• 3.75oz = 5oz pellet

LupoMax – 0.7oz per 1oz:
• 1.4oz = 2oz pellet
• 3.5oz = 5oz pellet
