I don't know what is happening. 8.25 strike gallons + 8 gallons of sparge... Had 13 gallons BEFORE the boil. Not sure how 2.9 gallons boiled off. But the beer will be too strong, again. Maybe dry hopping can offset it. Annoying. Need to figure out calculations.

Tasting Notes - 5.7.2024

Color: spot on, gelatin helped a lot of clearing

Aroma: corn, slight sweetness, clean fermentation profile, grassy hop

Taste: beer is definitely too heavy/strong from finishing at over 6%> need to make sure you get it to that 4.5ish range for true to style. Very clean fermentation, no fruity weird off flavors. The base malt, Bohemian floor malted...we think it's giving an odd sweetness (almost melody) flavor which isn't to style. ONLY USE GERMAN PILSNER MALT from here on out. At this ABV, the hops balance it well (remember you added a half an ounce to flavoring additions x2). I'd be curious on a normal ABV beer if the hop flavor is too pronounced. May as well keep it the same for the next recipe. With it being well carbonated, it is very refreshing. So aim for a high carb level. Finishes medium - not dry and not sweet. Probably bc the added ABV and lack of hop compensation. Mouthfeel is perfect - really enjoyable and satisfying. Head retention sucks. Like non whatsoever.

2.24.2024 - Changed the 15 and the 10 minute hops to 1.5 oz (they were both 1.0 oz). So if this is 'too much' for a Mexican lager move one or both back to 1.0 oz.

Also changed the bittering to Magnum since I have it on hand. You can always change it back to Warrior.

Overall IBU's should stay at 22 (perfect bitterness last time).

Only suggestion would be to try (experiment) with a hop profile that is 1.5 oz for 15 minutes and 1.5 oz for 10 minutes.

Again --- beer was really really good just a thought experiment with the hop changes.

Typical water profile for clean lagers

Mash at 150-151
Ferment at 52 (around 1 week)
Lager at 42 for 6 weeks
